Gazpacho
This refreshing summer soup is nutritious and very simple to prepare.
Ingredients
2 medium cucumbers, peeled and chopped
8 vine-ripened tomatoes, peeled
1 large onion
5 garlic cloves, peeled
1 green pepper, chopped
4 cups bouillon
1/4 cup red wine vinegar, or to taste
1 teaspoon salt
Freshly ground black pepper
Directions
1. Combine all ingredients in a blender and purée, then chill.
2. Serve after it's chilled. You may garnish with additional chopped tomato, cucumber, onions and/or green pepper.
Yield: 4 to 6 servings.
