Cheese and Turkey Burgers with Apples, Onions and Peppers
Great for leftovers after Thanksgiving, and full of fiber.
Ingredients
1½ pounds ground turkey (white meat)
1.2 ounce skim milk cheddar cheese, sliced very thinly
1/8 teaspoon kosher salt
vegetable cooking spray
1 large cooking apple (Granny Smith, Braeburn, MacIntosh) cored and cut into slices
2 ounces red onion, thinly sliced
½ red pepper, cut in strips
4 whole-wheat rolls
mustard and/or ketchup if desired
Directions:
- Shape the turkey into 8 patties. To make 4 burgers, shape the turkey into 8 patties. Put a slice of cheese on 4 patties, and then cover each with the remaining patties, pressing the sides down to enclose the cheese.
- Coat 2 skillets with cooking spray. Cook the patties in one skillet and the apples and vegetables in the other until done.
- When ready to serve, top the patties with the vegetable mixture and place on a bun. Pass the ketchup and mustard.
